Vegetables and Herbs Planned for Colchester Farm in 2008

  • arugula
  • beans: standard and French green beans, a purple-podded variety, and yellow wax beans
  • lima beans
  • soybeans or edamame
  • beets
  • bok choi - 2 varieties: one smaller, green-stemmed variety and one taller variety with white stems and dark green leaves
  • broccoli
  • cabbage: red, green, savoy and chinese or napa varieties
  • carrots
  • cauliflower
  • celeriac
  • celery
  • cucumbers: two varieties: long, slender slicing cucumber and a smaller, pickling variety
  • eggplant: three Italian varieties: classic dark purple, striped white and purple, and white -- two Oriental varieties: one a long, slender, dark purple, and the other a more lavender color
  • flowers: daisies, bachelor's buttons, snap dragons, zinnias, black-eyed susan, sunflowers, etc.
  • herbs: basil, chives, garlic chives, cilantro, dill, marjoram, oregano, parsley, rosemary, sage, thyme
  • kale: winterbor (ruffled green), red russian (purple-tinged, flat-leaved), nero di toscano (dark green, crinkled, narrow leaf)
  • leeks
  • lettuce mix
  • head lettuce: green and red oakleaf, butterhead, french crisp, and romaine varieties
  • mesclun mix: a mix of lettuces, baby swiss chard, beet greens, kales, tatsoi, and mizuna

  • potatoes, fingerling: yellow inside and out with waxy texture (Banana) and one with a dark rose-red skin with yellow waxy flesh (French Fingerling)
  • potatoes: Dark Red Norland and Red Pontiac (dark red skin and moist, firm-textured white flesh),Yellow Finn (yellow skin and bright yellow flesh with moist, firm texture), German Butterball (yellow with light russet skin with yellow, medium-dry flesh), and All Blue (dark purple skin and moist, firm-textured purple flesh)

  • radishes: french breakfast (a red and white longer shaped radish) and champion (round red)

  • patty pan squash: flattened, star-shaped yellow and green (flying saucer) and a light-green scalloped variety

  • swiss chard: white-stemmed, red-stemmed and rainbow-colored stems with green leaves

  • tomatoes, cherries, rainbow-mix--red, orange, yellow, and "black"
  • tomatoes, red: 4 varieties of early and midseason small and large
  • tomatoes, plum
  • tomatoes, heirloom: cherokee purple (dusky brownish-purple skin with brick-red flesh), black from tula (deep reddish brown), brandywine and pruden's purple (deep pink skin with red flesh), pineapple (marbled red and yellow), goldie (deep orange with a little red streaking on bottom), black krim (dark purple), green zebra (yellow blush with green stripes and tangy flavor)

  • turnip: purple top white globe and sweet white varieties
  • watermelons: several different varieties: small, ice-box sized with sweet pink to red centers, one orange-fleshed and one yellow-fleshed variety

  • wintersquash: acorn, butternut, sweet dumpling, and spaghetti squash
